Although Japanese don't reserve eggs for breakfast like us Americans that succumbed to Edward Bernays early 20th century "marketing" , I did in fact make this for breakfast.

Rice,brown and shimejji mushrooms and onions mixed with a fry sauce of tomato paste, soy sauce and loosened with dashi stock and sesame oil the give it zing, hold it together and provide the desired red color.

The sauce over the top is a miso curry ketchup.

The simplest form of this dish uses straight up ketchup for both. Nah.

that brings up something I found out, when the power goes out but the stovetop is still on. that dang thing starts right up where it left off. My debuyer started smoking and its a good thing I was home to catch it.

Thanks. It was delicious. Good eye on the Valentina. Haven't had it in a while so I saw it I bought it.

The beans really shine here. I pulled off some rib meat and some chiccaron to cook the beans with. There's also a touch of ground beef taco meat in there.
