Butts trimmed, soaking in brine for tonight's cook. 

I learned today that a typical coleman cooler is right on in size to contain 10 Boston Butts, and the brine to cover them.  I also learned that a 3lb box of kosher salt, a 2lb bag of brown sugar and a 5 gallon bucket full of water is the perfect way to make a large batch of brine, instead of measuring out the salt and sugar.  It just happens to come out right, a little shy on the sugar, but that isn't a concern at all. 



There's 10 butts in there.  It's 38° outside with a snow threat in the forecast.  So it's perfect for this.

It does haha!  I've had dealings with them for many years going back to the ex.

Don't know when we find out who won but I'll let ya know. On to other things now.

While I'm sure it's a legitimate charity with dedicated people, The Feral Cat Coalition sounds like a riot grrl band.  

The sandwich is pretty impressive.

Ok. Here's my sandwich submission.

Squash Buckler Torta
Refried charro beans, chorizo, fine strands of queso Oaxaca draped over, pork scraps, lime seasoned cilantro and shredduce, dried Mexican oregano, pickled white onion, pickled jalapeño, Tajin spiked crema applied with squeeze bottle, chili spiced squash schmear on the top bun of butter toasted cemita. Telera or bolillo would work too.

You gotta get to the Mercado early if you're going on a Sunday. I got there at 8:30am and the place was jumpin. Everywhere I went I was standing in line or navigating through. Came away with some real queso Oaxaca, carnitas, chicharrones de carne and cemita de trigo. More sandwich recipe testing.
