there's a few different ways.  which are you trying?  Some are as simple as jalapenos and mayo or sour cream/crema, some have cotija, some have cilantro, peppers,salt ,lime juice, garlic, and cotija (this is) my style)

I tried going with cilantro, peppers, salt, lime, garlic, and feta but it didn't taste anything like what I get from the places near where I live. 

Then I tried to go authentic with huacatay paste and amarillo pepper paste and that didn't taste anything like it either.

Got a solid recipe I could try out?

I just tried it with what I had on hand, and I like it.  I will need to make Lomo saltado tomorrow to go with it.

The stems went into it, which bothers me a bit. Somehow the seeds were gone from the final product. I am sure it is wonderful.

It would take a lot of food processing to inialate pepper seeds. I think. If you crush them up in their raw state into a paste - yuck.

I never saw any stems go in and I doubt there are.  The seeds and other bits are strained out with a food mill.  probably pretty good stuff and vegan cuz they look like vegan lesbians

yeah, been making my own hot sauce for a few years, and no amount of blending will break down seeds, even if they've been fermented. mill makes sense.
