Some snails are highly poisonous....or you will poison yourself handling them in prep...

I think the main worry here is what the snails have eaten.  So what you do is corral them into some container and you purge them for a couple weeks by feeding them cornmeal.  then they are to be boiled for 15-20 minutes.  Then you can prepare any way you like.
