Lardo, a super killer sandwich shop here, has done a thing the last couple years called the Citizenwich where anybody can submit a sandwich idea and name a charity where proceeds will go. I'm brainstorming ideas for this currently. It'll be in the menu for the month of January.

I want it to be unique of course but not too much so that it's difficult to prepare en masse rendering it a non qualifier. I'll be sketching out some ideas today. It'd be cool if my sandwich made the cut. Lots of competition though so....

Imma try to start a focaccia and ciabatta dough today for more testing of a couple others.

Here's a couple ideas that probably won't make the cut.

Banh mi variation.






Vietnamese baguette specifically, fried then braised pork belly (with garlic, shallots, lemongrass, coriander seed, chilis, fish sauce, shrimp paste and palm sugar), hard steamed egg, cukes, naem sausage, cilantro, kimchi'd shredduce, spicy garlic chilli mayo.

Chorizo, rancho beans, squash, pepper jack, puya guajillo chili sauce, pickled white onions, carrots, cilantro and shredduce for some cronch on bolillo

You gotta get to the Mercado early if you're going on a Sunday. I got there at 8:30am and the place was jumpin. Everywhere I went I was standing in line or navigating through. Came away with some real queso Oaxaca, carnitas, chicharrones de carne and cemita de trigo. More sandwich recipe testing.

Ok. Here's my sandwich submission.

Squash Buckler Torta
Refried charro beans, chorizo, fine strands of queso Oaxaca draped over, pork scraps, lime seasoned cilantro and shredduce, dried Mexican oregano, pickled white onion, pickled jalapeƱo, Tajin spiked crema applied with squeeze bottle, chili spiced squash schmear on the top bun of butter toasted cemita. Telera or bolillo would work too.

While I'm sure it's a legitimate charity with dedicated people, The Feral Cat Coalition sounds like a riot grrl band.

It does haha!  I've had dealings with them for many years going back to the ex.

Don't know when we find out who won but I'll let ya know. On to other things now.

Picked up this years venison the other say. I'd say this was about 70lbs worth.  $123 In butcher fees.  And I need to make the guy 5lbs of summer sausage.
